A
native of Naples, Italy, Valentino’s
Ristorante Executive Chef, Paolo Tramontano,
learned his love of cooking from his mother.
At his mother’s side,
Chef Paolo worked in the family kitchen learning
the secrets of Italian cooking.From her,
he gained a passion that infuses his dishes
with the love of his native home and family
cooking.
Seeing Chef Paolo’s passion
for cooking, his father suggested he enroll
in culinary school and hone his skills as a
professional chef.
In 1990, Chef Paolo entered
the world famous culinary institution of the “Instituto
Alberghiero di Roccaraso” in Rome. There
his skills grew and were refined by training
daily to perfect his craft.
Upon graduating from the institute,
Chef Paolo began his career in the Five Star
Hotel “Parco Di Principi” in Rome.
There he expanded his knowledge and began experimenting
with new dishes, always adhering to the passion
and love of cooking instilled into him by his
mother back in Naples.
After Hotel Parco, Chef Paolo
served as chef at the famed “Ristorante
S. Eustacchio”, also in Rome, where he
worked to the acclaim of patrons for several
years.
Always seeking to challenge
his cooking skills, Chef Paolo decided to challenge
himself and moved to New York to work amongst
the greatest chefs in the world. There he served
as chef in the world famous kitchens of the
MOMA, or Museum of Modern Arts. For two years
he served his culinary creations to a world
audience at the MOMA to rave reviews.
In 2006, Paolo was wooed to
work at Valentino’s Ristorante, right
here in Nashville. After so much international
success, he wanted a home where he could be
more free to create his dishes as he did with
his mother back in the home country.
